Pumpkin Pie
Ingredients:
1 can pumpkin
1 block silken tofu
1/2 C sugar
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cloves
1 pre-made graham cracker pie crust
Instructions:
In a blender, combine the pumpkin, tofu, sugar and spices. Run on high speed until smooth. Pour into crust and bake at 350 degrees for 45 minutes. Allow to cool for an hour, then refrigerate. Serve cold and with a dollop of creamy coconut topping if you’d like!
Serves 6-8.
